Abstract
The main purpose and function of food processing is to store agricultural products that are
vegetables in a processed state and prepare them for use in food products without additional processing.
In the process of processing, complex physico-chemical processes take place in the raw material. If the
production technology is violated, they can reduce the nutritional value of the product or lead to their
violation.
